2 cans black beans – drained and rinsed

2 cans shoepeg or white corn – drained

8 oz. crumbled feta cheese

2 bunches of green onion, chopped

1/3 cup olive oil

1/2 cup sugar

1/2 cup apple cider vinegar

Salt, pepper and garlic powder to taste


Mix the first 4 ingredients in a large bowl.

In a small bowl whisk remaining ingredients until sugar is dissolved.

Mix everything together in a sealable container.

Refrigerate for a minimum of 1½ hour. The longer sits, the better it tastes.

Serve with tortilla chips or eat with a spoon.
